Garlic mushrooms

This recipe can be made in advance and served warm or chilled
Ingredients:

450g button mushrooms
50g butter
4 tbsp raspberry vinegar
6 tbsp olive oil
3 tbsp Sugar
12 black peppercorns, lightly crushed
12 coriander seeds, lightly crushed
3 cloves of garlic, peeled and crushed
3 tbsp tomato purée
To serve: 2 tbsp chopped parsley


Method:
1. Clean the mushrooms. In a frying pan melt the butter then add the mushrooms and gently cook.

2. In a jug mix together the vinegar, oil, sugar, crushed peppercorns, coriander seeds, garlic and tomato puree. Then mix well.

3. Add to the frying pan with the mushrooms and bring to the boil. Turn off the heat and allow to stand for 30 minutes.

4. Transfer to a suitable dish and when cool place in the fridge. Allow to marinate for at least 3 hours.

5. To serve, garnish with chopped parsley
