Cod with blood oranges

Oranges with fish? You might be surprised!

Serves: 2
Preparation time: 5 minutes
Cooking time: 25 minutes


INGREDIENTS:
• 2 fillets cod with skin on
• 1 blood orange peeled and segmented
• 2 spring onions cut into fine strips
• juice and grated rind of ½ blood orange
• pinch ground coriander
• 2 cm fresh ginger, grated
• 1 tbsp sweet chilli sauce
• 2 tbsp coriander, chopped – to garnish



METHOD:
• Season the fillets with salt and pepper.

• In a hot pan fry for 2 minutes on both sides.

• Place the fish in a shallow baking dish and top with the orange segments and spring onions.

• Meanwhile in the frying pan add all the rest of the ingredients, except for the coriander, and simmer gently for 2 to 3 minutes.

• Pour the sauce over the fish, cover with baking parchment or foil and cook at 200°C/Gas Mark 6 for 10 to 15 minutes.

• Serve topped with coriander.
